For the Honey Dijon Butter:

  • 1 tbsp Dijon mustard

  • 2 tsp honey

  • 1 garlic clove, minced

  • ¼ tsp black pepper

For the Topping:

  • 1 large egg

  • 1 tbsp water

  • 1 tbsp everything bagel seasoning (optional)

  • 2 tbsp grated Parmesan cheese


Instructions

  • Make the Honey Dijon Butter: Mix softened butter, mustard, honey, garlic, and pepper. Set aside.

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment.

  • Assemble Croissants:

    • Slice croissants horizontally, keeping one edge intact.

    • Spread both sides with the honey Dijon butter.

    • Add about 1½ oz ham and 1½ oz cheese mixture to each.

    • Close gently.

  • Make Cheese Mixture: Toss Gruyère, Swiss, chives, and thyme together in a bowl.

  • Prepare for Baking:

    • Whisk egg and water for egg wash.

    • Brush tops of croissants.

    • Sprinkle with bagel seasoning and Parmesan.

  • Bake:

    • Bake for 12–15 minutes until golden and melty.

    • Broil for 1–2 minutes for extra crispness.

  • Cool and Serve: Let rest for 2–3 minutes before serving warm.
