- 1 3/4 cups all-purpose flour (or whole wheat flour, or gluten-free blend)
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 3/4 cup granulated sugar (or brown sugar, or a combination)
- 1/2 cup vegetable oil (or melted coconut oil, or 1/4 cup oil + 1/4 cup applesauce)
- 2 large eggs, at room temperature
- 1 teaspoon vanilla extract
- 1 cup mashed ripe bananas (about 2–3 medium bananas)
- 1 cup grated zucchini, squeezed dry
- Optional: 1/2 cup chopped nuts (walnuts, pecans), chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line with parchment paper.
- In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In a separate bowl, cream together sugar and oil. Add eggs one at a time, then stir in vanilla extract.
- Add mashed bananas and squeezed zucchini to the wet mixture and stir until just combined.
- Gradually add dry ingredients to wet, mixing until just combined. Do not overmix.
- Fold in optional ingredients like nuts or chocolate chips.
- Pour batter into prepared loaf pan and spread evenly.
- Bake for 50-60 minutes or until a skewer inserted in the center comes out clean.
- Cool in pan for 10 minutes, then transfer to wire rack to cool completely.
Notes
Use very ripe bananas for best flavor. Be sure to squeeze the zucchini dry to avoid soggy bread. This bread freezes well – slice before freezing for easy portions.
