8 ripe peaches (about 3 pounds), peeled and sliced

For the Cobbler Topping:

1½ cups all-purpose flour

¼ cup brown sugar, packed

1½ tsp baking powder

½ tsp salt

½ tsp cinnamon

½ cup cold butter, cubed

½ cup buttermilk

1 tsp vanilla extract

1 tbsp coarse sugar (optional)
Instructions

Preheat oven to 375°F. Lightly grease a 9×13-inch baking dish.

To peel peaches, boil for 30–45 seconds, transfer to ice bath, then slip off skins. Slice into ½-inch wedges.

Toss peaches with both sugars, cornstarch, lemon juice, vanilla, spices, and salt. Pour into baking dish.

In a bowl, whisk together dry topping ingredients. Cut in butter until crumbly. Add buttermilk and vanilla; stir gently to combine.

Drop topping in spoonfuls over peaches, leaving some gaps. Sprinkle with coarse sugar if desired.

Bake 40–45 minutes until golden and bubbly. Cool for at least 20 minutes before serving.
