  • 2 tablespoons olive or avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 2 yellow onions, thinly sliced
  • 2 green bell peppers, sliced
  • 1 red bell pepper, sliced
  • 4 cloves garlic, minced
  • 8 oz mushrooms, sliced (optional)
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 2 cups shredded provolone
  • 1 cup shredded sharp cheddar
  • ½ cup shredded mozzarella
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Brown seasoned beef in batches with garlic and onion powders, then transfer to a bowl.
  3. Sauté onions for 8–10 minutes until caramelized. Add peppers, mushrooms, and garlic; cook 5–7 more minutes.
  4. In a saucepan, whisk cream cheese and heavy cream until smooth. Add 1½ cups provolone and all cheddar, stir until melted. Season with Worcestershire, paprika, oregano, and optional red pepper flakes.
  5. Combine beef and sautéed veggies in baking dish. Pour cheese sauce over and mix gently.
  6. Top with remaining provolone and mozzarella. Cover with foil and bake for 25 minutes.
  7. Uncover and bake 15–20 more minutes until bubbly and golden. Rest 5–10 minutes before serving.
