Instructions

- Beat in egg and vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Fold in diced apples and caramel bits evenly.
- Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.
- Bake for 9-11 minutes until edges are golden brown and centers are set.
- Cool on baking sheet for a few minutes, then transfer to wire rack to cool completely.
Notes
For chewier cookies, chill dough for 30 minutes before baking. Use tart apples like Granny Smith for best flavor balance. A sprinkle of sea salt before baking enhances the caramel flavor beautifully.
