- 2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 oz deli ham, diced
- 2 cups shredded Swiss cheese (or Gruyere)
- 4 tbsp butter
- 4 tbsp all-purpose flour
- 2 cups whole milk
- 1 cup chicken broth
- 2 tbsp Dijon mustard
- 1 tsp dried thyme
- ¼ cup dry white wine (optional)
- Salt and black pepper to taste
- 1 cup panko breadcrumbs
- 3 tbsp butter, melted (for topping)
- Fresh parsley or thyme for garnish (optional)
Instructions
- Preheat oven to 375°F. Grease a 9×13-inch baking dish.
- In a saucepan over medium heat, melt 4 tbsp butter. Whisk in flour and cook 2-3 minutes. Slowly whisk in milk, broth, Dijon mustard, thyme, and wine. Simmer 5-7 minutes until thick. Season with salt and pepper.
- Layer diced chicken evenly in baking dish. Add ham, then sprinkle with 1½ cups shredded cheese.
- Pour sauce over the top, spreading evenly. In a small bowl, mix breadcrumbs with melted butter and a pinch of salt. Sprinkle over casserole, then top with remaining cheese.
- Cover with foil and bake 35 minutes. Remove foil and bake 15-20 more minutes, until golden and bubbly.
- Let rest 10 minutes before serving. Garnish with fresh parsley if desired.
