- 4 boneless, skinless chicken breasts or thighs
- 2 chipotle peppers in adobo sauce, minced (plus 1 tablespoon adobo sauce)
- ½ cup ranch dressing (homemade or quality store-bought)
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Optional: 1 teaspoon honey or brown sugar (for sweet heat variation)
Instructions
- In a small bowl, combine ranch dressing, minced chipotle peppers, adobo sauce, olive oil, salt, and pepper. Whisk until smooth and taste for spice level.
- Place chicken in a zip-top bag or shallow dish and pour marinade over it. Massage to coat evenly. Marinate in refrigerator for at least 2 hours, up to 24 hours.
- Preheat grill to medium-high heat. Oil grates to prevent sticking.
- Sear chicken for 2–3 minutes per side, then move to indirect heat and grill until internal temperature reaches 165°F, about 6–8 minutes per side for boneless pieces.
- Remove from grill and let rest 5–10 minutes before slicing. Serve with your favorite sides or over salad, rice, or in wraps.
Notes
For a milder version, remove seeds from chipotles or reduce to one pepper. This recipe also works well with pork tenderloin or portobello mushrooms. Leftovers are great for salads, wraps, or sandwiches.
