  • 2 chipotle peppers in adobo sauce, minced (plus 1 tablespoon adobo sauce)
  • ½ cup ranch dressing (homemade or quality store-bought)
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: 1 teaspoon honey or brown sugar (for sweet heat variation)

Instructions

  1. In a small bowl, combine ranch dressing, minced chipotle peppers, adobo sauce, olive oil, salt, and pepper. Whisk until smooth and taste for spice level.
  2. Place chicken in a zip-top bag or shallow dish and pour marinade over it. Massage to coat evenly. Marinate in refrigerator for at least 2 hours, up to 24 hours.
  3. Preheat grill to medium-high heat. Oil grates to prevent sticking.
