- 2 pounds of Yukon Gold potatoes
- 1 tablespoon of salt (for boiling water)
- 2 tablespoons of olive oil
- 6 cloves of garlic, minced
- 2 tablespoons of unsalted butter
- 1 cup of heavy cream
- ½ cup of vegetable or chicken broth
- 1 teaspoon of fresh thyme leaves
- ½ teaspoon of dried Italian herbs
- Salt and freshly ground black pepper to taste
- ¼ cup of freshly grated Parmesan cheese
- 1 tablespoon of fresh parsley, chopped (for garnish)
Instructions
- Scrub and cube potatoes into 1-inch pieces, no peeling needed.
- Place potatoes in a pot, cover with water, add salt, and bring to a boil. Simmer for 7–8 minutes until just fork-tender.
- Drain and let steam dry for a couple minutes.
- Heat olive oil in a skillet over medium-high heat. Sear potatoes in batches 4–5 minutes until golden. Set aside.
- Lower heat to medium-low. In the same skillet, melt butter, add garlic, and sauté for 1 minute until fragrant.
- Stir in heavy cream and broth, then add thyme and Italian herbs. Simmer gently 5–7 minutes until sauce thickens slightly.
- Season with salt and pepper, then stir in Parmesan cheese until smooth.
- Return potatoes to skillet, gently fold into sauce.
- Simmer 2–3 minutes to blend flavors.
- Garnish with fresh parsley and serve.
Notes
Parboil potatoes ahead to save time. Yukon Golds are best, but Russets or reds work too. Add shredded chicken or shrimp for a complete meal. For a lighter version, use half-and-half and reduce butter.
