  • 2 pounds of Yukon Gold potatoes
  • 1 tablespoon of salt (for boiling water)
  • 2 tablespoons of olive oil
  • 6 cloves of garlic, minced
  • 2 tablespoons of unsalted butter
  • 1 cup of heavy cream
  • ½ cup of vegetable or chicken broth
  • 1 teaspoon of fresh thyme leaves
  • ½ teaspoon of dried Italian herbs
  • Salt and freshly ground black pepper to taste
  • ¼ cup of freshly grated Parmesan cheese
  • 1 tablespoon of fresh parsley, chopped (for garnish)

Instructions

  1. Scrub and cube potatoes into 1-inch pieces, no peeling needed.
  2. Place potatoes in a pot, cover with water, add salt, and bring to a boil. Simmer for 7–8 minutes until just fork-tender.
  3. Drain and let steam dry for a couple minutes.
  4. Heat olive oil in a skillet over medium-high heat. Sear potatoes in batches 4–5 minutes until golden. Set aside.
  5. Lower heat to medium-low. In the same skillet, melt butter, add garlic, and sauté for 1 minute until fragrant.
  6. Stir in heavy cream and broth, then add thyme and Italian herbs. Simmer gently 5–7 minutes until sauce thickens slightly.
  7. Season with salt and pepper, then stir in Parmesan cheese until smooth.
  8. Return potatoes to skillet, gently fold into sauce.
  9. Simmer 2–3 minutes to blend flavors.
  10. Garnish with fresh parsley and serve.

Notes

Parboil potatoes ahead to save time. Yukon Golds are best, but Russets or reds work too. Add shredded chicken or shrimp for a complete meal. For a lighter version, use half-and-half and reduce butter.
