- 2 cups fresh or frozen strawberries, hulled
- 1 cup plain Greek yogurt (whole milk or low-fat)
- 1/4 cup honey or maple syrup (or more, to taste)
- 1 tablespoon lemon juice (optional)
- Pinch of salt
Instructions
- Prep Strawberries: Wash and hull fresh strawberries or let frozen strawberries thaw slightly for 10–15 minutes.
- Blend: In a blender or food processor, combine strawberries, yogurt, honey or maple syrup, lemon juice, and salt. Blend until smooth and creamy.
- Chill: Pour into a container, cover, and refrigerate for at least 2 hours or overnight to enhance flavor and texture.
- Churn: Pour chilled mixture into pre-frozen ice cream maker bowl. Churn according to manufacturer’s instructions (about 20–25 minutes) until soft-serve consistency.
- Freeze: Transfer to an airtight container and freeze 2–3 hours for firmer texture.
- Serve: Scoop into bowls or cones and top with your favorite add-ins like fresh berries, granola, or chocolate chips.
Notes
Use ripe, fragrant strawberries for best flavor. For a vegan version, use coconut yogurt and maple syrup. Chill thoroughly before churning to prevent ice crystals and ensure creaminess.
