- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil (optional, for searing chicken)
- Fresh basil, chopped (for garnish)
Instructions
- Optional: Heat olive oil in a skillet over medium-high. Sear chicken breasts for 2–3 minutes per side until lightly browned.
- In a bowl, whisk together cream of chicken soup, heavy cream, sun-dried tomatoes, Parmesan, garlic, Italian seasoning, salt, and pepper.
- Place chicken in crockpot and pour sauce over it evenly.
- Cover and cook on low for 6–8 hours or high for 3–4 hours, until chicken is cooked and shreds easily.
- Shred chicken using two forks and stir back into the sauce.
- Garnish with fresh basil and serve hot over pasta, rice, mashed potatoes, or cauliflower rice.
