  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine the sliced cucumbers, bell peppers, and red onion.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, minced garlic, salt, and black pepper.
  3. Pour the dressing over the vegetables and toss gently to coat.
  4. Sprinkle the chopped parsley and basil over the salad and toss again to distribute the herbs evenly.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
