- 6 boneless, skinless chicken breasts
- 1 cup pineapple juice
- 1/2 cup brown sugar
- 1/4 cup soy sauce
- 2 tablespoons ketchup
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1/2 teaspoon ground ginger
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- Place the chicken breasts in a crockpot or slow cooker.
- In a medium bowl, whisk together pineapple juice, brown sugar, soy sauce, ketchup, Dijon mustard, garlic powder, and ground ginger.
- Pour sauce mixture over the chicken, making sure the breasts are fully submerged.
- Add red pepper flakes if desired, and season with salt and pepper to taste.
- Cover and cook on low for 6–8 hours or on high for 3–4 hours, until chicken is tender and cooked through.
- Use two forks to shred the chicken directly in the crockpot.
- Serve over rice, in sliders, or with roasted vegetables.
Notes
Resist lifting the lid during cooking to keep steam and heat inside. Chicken thighs can be used for more flavor. Add bell peppers or onions for extra depth.
