Description
This easy chicken burrito casserole is a one-dish weeknight wonder filled with seasoned chicken, rice, beans, veggies, and cheese. A comforting, family-friendly favorite.

- 1½ lbs boneless, skinless chicken breasts or thighs
- 2 cups cooked rice (use chicken broth for extra flavor)
- 1 can black beans, drained and rinsed
- 1 can corn kernels, drained
- 1 can diced tomatoes, drained
- 1 large onion, diced
- 2 bell peppers, diced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- ½ tsp paprika
- Salt and pepper to taste
- 2 cups shredded Mexican cheese blend
- 2 tbsp vegetable oil
- Sour cream, salsa, and tortillas for serving
Instructions
- Preheat oven to 375°F and grease a 9×13-inch baking dish. Cook rice using chicken broth for extra flavor.
- Season chicken with salt, pepper, chili powder, and cumin. Cook in oil over medium-high heat until golden and cooked through. Set aside and shred.
- In the same skillet, sauté onion and peppers for 4–5 minutes. Add garlic, chili powder, cumin, and paprika. Cook 1 minute more.
- In the baking dish, combine rice, shredded chicken, sautéed vegetables, black beans, corn, and diced tomatoes. Mix well and season to taste.
- Top evenly with shredded cheese. Cover with foil and bake for 25 minutes. Uncover and bake 10–15 minutes more until bubbly and golden.
- Serve hot with your favorite toppings like sour cream, salsa, guacamole, or fresh cilantro.
Notes
Use leftover rotisserie chicken for quicker prep. For added spice, stir in chopped jalapeños or hot sauce. Cauliflower rice can substitute for a low-carb version.
