- 6 cups sliced peaches
- 2 cups fresh raspberries
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/3 cup granulated sugar (for topping)
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 6 tablespoons cold butter, cubed
- 1/2 cup milk
- 1 large egg
- 1 teaspoon vanilla extract (for topping)
- 2 tablespoons coarse sugar
Instructions
- Preheat oven to 375°F and butter a 9×13 inch baking dish.
- In a large bowl, combine sliced peaches, raspberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Let sit for 10 minutes.
- In another bowl, whisk flour, granulated sugar, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs.
- In a small bowl, whisk milk, egg, and vanilla extract. Add to the flour mixture and stir just until combined.
- Transfer fruit to the baking dish and spread evenly. Drop spoonfuls of topping over the fruit, leaving gaps for the fruit to show.
- Sprinkle coarse sugar over the top.
- Bake for 35-40 minutes, until topping is golden brown and fruit is bubbling.
- Let cool for at least 15 minutes before serving.
Notes
Let cobbler cool slightly to allow the juices to thicken. Store leftovers in the fridge for up to 3 days and reheat before serving. Add cinnamon or almond extract for a flavor twist.
