Ingredients

2 whole heads of garlic

1 cup (2 sticks) unsalted butter, softened

Instructions

Preheat oven to 400°F (200°C). Slice tops off garlic heads, drizzle with olive oil, and wrap in foil. Roast for 40–45 minutes until golden and soft.

Cool slightly, then squeeze out garlic cloves into a bowl.

Add softened butter, salt, pepper, and any optional ingredients. Mash and mix until well combined.

Shape into a log with parchment or transfer to a container. Chill for at least 1 hour before serving.
