  • 2 ripe avocados
  • 1/4 cup plain Greek yogurt (or sour cream)
  • 2 tablespoons lime juice
  • 1/4 cup chopped cilantro
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • For the Bowl:
  • 2 cups cooked rice (white, brown, or quinoa)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup corn kernels (fresh or frozen)
  • Optional toppings: sriracha, sesame seeds, lime wedges

Instructions

  1. In a bowl, toss shrimp with olive oil, smoked paprika, garlic powder, salt, and pepper. Set aside.
  2. Heat grill or grill pan over medium-high heat. Grill shrimp for 2–3 minutes per side until pink and cooked through.
  3. In a food processor, blend avocados, Greek yogurt, lime juice, cilantro, and garlic until smooth. Season with salt and pepper to taste.
