- For the Cheesecake Filling:
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup heavy cream
- For the Strawberry Filling:
- 1 pound fresh strawberries, hulled and sliced
- 2 tablespoons granulated sugar
- 1 tablespoon lemon juice
- For the Sandwich Assembly:
- 8 slices of brioche bread (or similar)
- 4 tablespoons butter, softened
- For Frying:
- 2 tablespoons butter
Instructions
- In a bowl, beat cream cheese until smooth. Add powdered sugar and vanilla; mix until combined.
- Whip heavy cream to stiff peaks, then fold into the cream cheese mixture. Chill for 30 minutes.
- Combine sliced strawberries, sugar, and lemon juice in a bowl. Let sit for 15 minutes to macerate.
- Butter one side of each slice of bread. Spread cheesecake filling on 4 slices (unbuttered side), top with strawberries, and close with remaining bread (buttered side out).
- Heat 2 tablespoons of butter in a non-stick skillet over medium heat. Grill sandwiches for 3–4 minutes per side until golden brown.
- Let cool slightly on a wire rack. Serve warm, dusted with powdered sugar or topped with whipped cream, chocolate sauce, or ice cream.
Notes
For best results, use ripe, fresh strawberries and high-quality cream cheese. You can swap in raspberries, blueberries, or even peaches. Great served with a drizzle of chocolate or scoop of vanilla ice cream!
