Ingredients

  • 2 cups all-purpose flour, plus 2 tbsp for coating strawberries
  • 3/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 3/4 cup sour cream (or Greek yogurt)
  • 1 tsp vanilla extract
  • 1/4 cup milk
  • 1 1/2 cups fresh strawberries, diced

Instructions

  1. Preheat oven to 350°F. Grease and flour a 9×5-inch loaf pan.
  2. Toss diced strawberries with 2 tbsp flour. Set aside.
  3. In a large bowl, whisk together 2 cups flour, sugar, baking powder, and salt.
  4. Add melted butter, eggs, sour cream, vanilla, and milk to the dry ingredients. Stir until just combined.
  5. Gently fold in floured strawberries.
  6. Pour batter into prepared pan and smooth the top. Tap the pan to release air bubbles.
  7. Bake 55–65 minutes or until a toothpick comes out with moist crumbs. Tent with foil if browning too quickly.
  8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Coating the strawberries with flour helps prevent sinking. Use room temperature eggs and dairy for best results. Bread freezes well sliced and individually wrapped.
