Nectarine Cobbler is the ultimate summer dessert—juicy, sweet nectarines beneath a golden, buttery biscuit topping. It’s easy to make, smells incredible while baking, and is perfect for backyard gatherings or weeknight treats.

- 8–10 ripe nectarines (about 3 lbs), pitted and sliced
- ¾ cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- Pinch of salt
- 2 tablespoons unsalted butter, cut into small pieces
- For topping:
- 1½ cups all-purpose flour
- ½ cup granulated sugar
- 1½ teaspoons baking powder
- ½ teaspoon salt
- 6 tablespoons cold unsalted butter, cubed
- ¾ cup whole milk
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons coarse sugar (for sprinkling)
Instructions
- Preheat oven to 375°F. Butter a 9×13-inch baking dish.
- In a large bowl, toss nectarines with sugar, cornstarch, lemon juice, vanilla, cinnamon, nutmeg, and salt. Let sit 10 minutes.
- Transfer fruit to baking dish and dot with small pieces of butter.
- In a separate bowl, whisk flour, sugar, baking powder, and salt. Cut in cold butter with pastry cutter or forks until crumbly.
- In a small bowl, whisk milk, egg, and vanilla. Add to flour mixture and stir just until combined.
- Drop spoonfuls of topping over fruit, leaving gaps. Sprinkle coarse sugar on top.
- Bake 45–55 minutes, until golden and bubbling. Cool 15 minutes before serving with vanilla ice cream or whipped cream.
Notes
Use ripe but firm nectarines. Don’t overmix the topping. For individual servings, divide into ramekins and reduce baking time to 25–30 minutes. Add blueberries or bourbon for variation.
