Instructions

  1. Preheat oven to 350°F (175°C) and butter or spray a 9×13-inch dish or 10-inch cast-iron skillet.
  2. Bring a pot of water to boil and prepare an ice bath. Score peaches with an “X” at the bottom.
  3. Blanch peaches for 30-45 seconds, transfer to ice bath, then peel and slice into ½-inch wedges.
