- 2 tablespoons all-purpose flour

- ⅛ teaspoon salt
- 1 cup old-fashioned rolled oats
- ¾ cup all-purpose flour
- ⅔ cup packed light brown sugar
- ½ cup chopped pecans or walnuts (optional)
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- ½ cup (1 stick) cold unsalted butter, cubed
- 1 teaspoon vanilla extract
- Vanilla ice cream (for serving)
- Fresh mint leaves (optional garnish)
- Additional sliced peaches (optional garnish)
Instructions
- Preheat oven to 350°F (175°C) and butter or spray a 9×13-inch dish or 10-inch cast-iron skillet.
- Bring a pot of water to boil and prepare an ice bath. Score peaches with an “X” at the bottom.
- Blanch peaches for 30-45 seconds, transfer to ice bath, then peel and slice into ½-inch wedges.
- In a large bowl, toss sliced peaches with sugar, flour, lemon juice, cinnamon, nutmeg, almond extract, and salt.
- Transfer peach mixture to the prepared baking dish and spread evenly. Drain excess liquid if needed.
- In a medium bowl, mix oats, flour, brown sugar, nuts (if using), cinnamon, and salt.
- Add cold butter and vanilla, and cut in until mixture resembles coarse crumbs with pea-sized pieces.
- Sprinkle topping evenly over the peach filling without pressing down.
- Bake for 40-45 minutes until topping is golden and filling is bubbling around edges.
- Let cool 15-20 minutes before serving to allow flavors to meld and filling to set.
- Serve warm with vanilla ice cream, mint leaves, or fresh peach slices as garnish.
Notes
For crispier topping, refrigerate the crumb mix before baking. To reheat, use a 300°F oven instead of a microwave to preserve texture. Substitute frozen or canned peaches with adjustments for sugar and moisture.
