- 2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 onion, diced
- 3 cloves garlic, minced
- 1 inch fresh ginger, grated
- 2 tablespoons peanut oil
- 1 cup creamy peanut butter
- 1 cup coconut milk
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 teaspoon curry powder
- 1 teaspoon ground cumin
- 1/2 teaspoon crushed red pepper flakes (optional)
- Salt and pepper to taste
- Chopped cilantro, for garnish
- Steamed rice, for serving
Instructions
- Heat peanut oil in a large pot or Dutch oven over medium-high heat. Sauté diced onion for 3–4 minutes until translucent.
- Add garlic and ginger; cook for 1 more minute, stirring constantly.
- Add chicken pieces and brown on all sides, about 5–7 minutes.
- In a bowl, whisk peanut butter, coconut milk, soy sauce, brown sugar, curry powder, and cumin.
- Pour the peanut sauce into the pot with the chicken. Stir to coat evenly.
- Bring to a simmer, then reduce heat to low. Cover and simmer 45–60 minutes, stirring occasionally.
- Stir in crushed red pepper flakes if desired. Adjust seasoning with salt and pepper.
- Serve over steamed rice and garnish with chopped cilantro.
Notes
Use high-quality peanut butter and coconut milk for best results. Adjust spice levels to taste. Pairs well with rice, salad, or roasted vegetables.
