  • 2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 2 tablespoons peanut oil
  • 1 cup creamy peanut butter
  • 1 cup coconut milk
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste
  • Chopped cilantro, for garnish
  • Steamed rice, for serving

Instructions

  1. Heat peanut oil in a large pot or Dutch oven over medium-high heat. Sauté diced onion for 3–4 minutes until translucent.
  2. Add garlic and ginger; cook for 1 more minute, stirring constantly.
  3. Add chicken pieces and brown on all sides, about 5–7 minutes.
  4. In a bowl, whisk peanut butter, coconut milk, soy sauce, brown sugar, curry powder, and cumin.
  5. Pour the peanut sauce into the pot with the chicken. Stir to coat evenly.
  6. Bring to a simmer, then reduce heat to low. Cover and simmer 45–60 minutes, stirring occasionally.
  7. Stir in crushed red pepper flakes if desired. Adjust seasoning with salt and pepper.
  8. Serve over steamed rice and garnish with chopped cilantro.

Notes

Use high-quality peanut butter and coconut milk for best results. Adjust spice levels to taste. Pairs well with rice, salad, or roasted vegetables.
