  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 6 tablespoons cold butter, cubed
  • 3/4 cup cold milk
  • 1 cup shredded cheddar cheese
  • Optional: 1/2 cup corn kernels, 1 jalapeño diced, 1/4 cup diced pickles, 2 tablespoons fresh parsley

Instructions

  1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
  2. In a large skillet, brown ground beef over medium-high heat. Drain excess fat.
  3. Add onion and bell pepper; cook until softened. Stir in garlic and cook 1 more minute.
  4. Stir in tomato sauce, tomato paste, brown sugar, Worcestershire, mustard, chili powder, paprika, salt, and pepper. Simmer for 10-15 minutes until thickened.
  5. In a bowl, mix flour, baking powder, salt, and sugar. Cut in cold butter until mixture resembles coarse crumbs.
  6. Add milk and stir just until dough comes together. Fold in cheddar cheese.
  7. Spread sloppy joe mixture in prepared dish. Drop spoonfuls of biscuit dough on top. Sprinkle more cheese if desired.
  8. Bake for 25-30 minutes until biscuits are golden and cooked through.
  9. Let rest 5-10 minutes before serving. Garnish with parsley if desired.
