This Sour Cream Beef Noodle Casserole is the ultimate comfort food packed with tender ground beef, creamy sour cream, and cheesy egg noodles. Perfect for busy weeknights or potluck gatherings!

- 12 oz wide egg noodles
- 1½ lbs ground beef
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 2 cups sour cream
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 2 tablespoons tomato paste
- 1 can (14.5 oz) diced tomatoes, drained
- 2 teaspoons Worcestershire sauce
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- ½ teaspoon garlic powder
- Salt and black pepper to taste
- 1 cup panko breadcrumbs
- ½ cup additional cheddar cheese
- 2 tablespoons butter, melted
- Fresh parsley for garnish
Instructions
- Preheat oven to 350°F and grease a 9×13-inch baking dish.
- Cook egg noodles in salted water until al dente, drain and set aside.
- In a large skillet, brown the ground beef over medium-high heat, then add onion, bell pepper, and cook until softened. Stir in garlic and cook 1 minute.
- Add tomato paste, cook for 2 minutes, then add diced tomatoes, Worcestershire, paprika, oregano, garlic powder, salt, and pepper. Simmer 5 minutes.
- In a large bowl, mix softened cream cheese and sour cream until smooth. Stir in beef mixture, 1 cup cheddar, mozzarella, and cooked noodles until well combined.
- Transfer mixture to prepared baking dish. Mix panko, melted butter, and remaining cheddar, and sprinkle over the top.
- Cover with foil and bake 25 minutes. Remove foil and bake another 15–20 minutes until bubbly and golden. Garnish with parsley before serving.
Notes
Use room temperature cream cheese for a smooth base. Don’t overcook noodles, as they will soften more in the oven. Freeze leftovers up to 3 months.
