- 3 1/2 to 4 cups all-purpose flour, divided
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1/4 cup granulated sugar
- 1 teaspoon salt
- 1/3 cup whole milk
- 1/4 cup water
- 1/4 cup unsalted butter
- 1 large egg, room temperature
- For the Filling:
- 1 1/2 cups fresh strawberries, diced
- 2 tablespoons granulated sugar
- 1/3 cup unsalted butter, softened
- 2/3 cup packed light brown sugar
- 2 teaspoons ground cinnamon
- 1/4 teaspoon vanilla extract
- Pinch of salt
- For the Glaze:
- 4 ounces cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- 3–4 tablespoons whole milk
- 1 teaspoon vanilla extract
- 2 tablespoons strawberry jam (optional)
Instructions
- Toss diced strawberries with 2 tablespoons sugar and let macerate for 30 minutes. Drain and reserve syrup.
- In a large bowl, mix 2 cups flour with yeast, sugar, and salt.
- Heat milk, water, and butter to 120–130°F. Add to dry mixture with egg. Beat 3 minutes, then stir in flour until soft dough forms.
- Knead 6–8 minutes until smooth. Place in greased bowl, cover, and let rise 1 hour or until doubled.
- Combine softened butter, brown sugar, cinnamon, vanilla, and salt for filling.
- Punch down dough and roll into 15×10-inch rectangle. Spread filling, then top with drained strawberries.
- Roll tightly and cut into 12 rolls. Arrange in greased 9×13 pan. Let rise 30–45 minutes.
- Preheat oven to 375°F. Bake rolls 20–25 minutes or until golden and cooked through. Cool 10 minutes.
- Beat cream cheese and butter until smooth. Add powdered sugar, milk, vanilla, and strawberry jam. Drizzle over warm rolls.
Notes
Make these ahead by refrigerating unbaked rolls overnight. Let rise at room temp before baking. Add strawberry syrup to glaze for stronger fruit flavor and pink hue.
