  • 4 cups cubed watermelon seedless preferred
  • 1 tablespoon lime juice freshly squeezed
  • 1-2 tablespoons honey or agave nectar optional, adjust to taste

Method
 

  1. Prepare the watermelon: Cut the watermelon into cubes, removing any seeds if necessary.
  2. Blend: Place the watermelon cubes and lime juice into your blender or food processor.
  3. Blend until smooth: Blend until completely smooth, stopping to scrape down the sides as needed. The mixture should be a vibrant pink color.
  4. Taste and adjust: Taste the mixture and add honey or agave nectar if desired. Remember, watermelon varies in sweetness, so adjust to your preference.
  5. Freeze: Pour the mixture into a freezer-safe container.
  6. Freeze for at least 2 hours: Freeze until solid, but not rock hard. It should be scoopable. For best results, freeze for 3-4 hours or until firm.
  7. Break it up: Remove the container from the freezer and let it sit for a few minutes to soften slightly. Then, break the frozen mixture into chunks.
  8. Blend again (optional): For a smoother, more scoopable sorbet, return the frozen chunks to your blender or food processor and blend until smooth and creamy. This step is optional but highly recommended.
  9. Serve: Scoop and serve immediately. Garnish with a sprig of mint or a lime wedge, if desired.

Notes

For best results, use a very ripe and sweet watermelon. If your watermelon isn't sweet enough, add a bit more honey or agave nectar. If you don't have lime juice, lemon juice can be used as a substitute. Store leftover sorbet in an airtight container in the freezer for up to 2 weeks. If it becomes too hard, let it sit at room temperature for a few minutes to soften slightly, then re-blend it before serving. Consider adding fresh mint or basil for a flavor variation.
