- Wash the mushrooms gently under cold water. Do not soak. Pat them dry with paper towels.
- If using larger mushrooms, slice them into bite-sized pieces. Smaller mushrooms can be left whole or halved.
- In a medium bowl, combine the olive oil, minced garlic, soy sauce (or tamari), dried thyme, salt, and pepper.
- Whisk everything together until well combined.
- Add the prepared mushrooms to the bowl with the marinade.
- Toss them gently to coat evenly, making sure every mushroom is glistening with the flavorful mixture.
- Let the mushrooms marinate for at least 10 minutes, or up to 30 minutes for a more intense flavor.
- Preheat your air fryer to 400°F (200°C) for 3-5 minutes.
- Place the marinated mushrooms in the air fryer basket in a single layer. Avoid overcrowding the basket. Cook in batches if necessary.
- Air fry for 8-12 minutes, or until the mushrooms are tender and golden brown, shaking the basket halfway through.
- Remove the roasted mushrooms from the air fryer and transfer them to a serving dish.
- If desired, squeeze a little lemon juice over them, sprinkle with red pepper flakes, or drizzle with balsamic glaze.
- Serve immediately and enjoy!
Notes
For best results, don't overcrowd the air fryer. This will cause the mushrooms to steam rather than roast. Pat the mushrooms dry before marinating to ensure they brown properly. Adjust the cooking time based on the size of the mushrooms. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer or microwave. You can also freeze the roasted mushrooms for longer storage. Thaw overnight in the refrigerator before reheating. To prevent sticking, lightly spray the air fryer basket with cooking oil before adding the mushrooms.
