  • 1 cup mixed berries strawberries, raspberries, blueberries, blackberries
  • ½ cup cranberry juice unsweetened
  • ¼ cup lemon juice freshly squeezed
  • 2 tablespoons maple syrup or honey, adjust to taste
  • 1 cup sparkling water or club soda
  • Apple slices for garnish
  • Fresh berries for garnish
  • Sprigs of mint for garnish
  • Edible flowers for garnish

Method
 

  1. Prepare the Berry Infusion: In a saucepan, combine the mixed berries and ¼ cup of the apple juice.
  2. Gently heat over medium heat, mashing the berries as they soften.
  3. Simmer for about 5 minutes to extract the flavor and color.
  4. Remove from heat and let cool slightly.
  5. Strain the mixture through a fine-mesh sieve, pressing the berries to extract all the juice. Discard the solids.
  6. Combine the Juices: In a pitcher, combine the remaining apple juice, cranberry juice, lemon juice, and the berry infusion.
  7. Stir well to mix.
  8. Sweeten to Taste: Add maple syrup (or honey) to the mixture, starting with 2 tablespoons.
  9. Taste and adjust the sweetness as needed.
  10. Chill: Refrigerate the mixture for at least 30 minutes to allow the flavors to meld.
  11. Serve: Just before serving, add the sparkling water or club soda to the pitcher.
  12. Stir gently to combine.
  13. Pour into glasses filled with ice.
  14. Garnish with apple slices, fresh berries, sprigs of mint, or edible flowers.

Notes

For a spiced version, add a cinnamon stick or a few cloves to the berry infusion. For an herbal infusion, infuse the apple juice with fresh herbs like rosemary or thyme. You can also freeze blended berries in ice cube trays for a colorful and flavorful addition. For an adult version, add a shot of vodka or gin to each serving. Store leftover mocktail in the refrigerator for up to 24 hours; the sparkling water may lose its fizz over time.
