Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, whisk together the cake mix, Jello gelatin powder, and baking powder.
  4. In a separate bowl, cream together the softened butter and eggs until smooth and well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix!
  6. If adding any optional ingredients like sprinkles or chocolate chips, gently fold them in now.
  7. Use a cookie scoop or spoon to drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
  8. Bake for 8-10 minutes, or until the edges are lightly golden. The centers will still be soft.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

If your dough seems too dry, add a tablespoon of milk or water at a time until it reaches a good consistency. Remember, it should be slightly sticky.
Flat cookies can be caused by overmixing or using melted butter instead of softened butter. Make sure your butter is softened, not melted, and avoid overmixing the dough.
If you find the cookies too sweet, you can reduce the amount of Jello powder slightly or use a less sweet cake mix.
