  • 4 slices Monterey Jack cheese or cheddar, provolone, or pepper jack
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped cilantro optional
  • 2 tablespoons chopped red onion optional
  • Hot sauce optional

Method
 

  1. Pat the chicken breasts dry with paper towels.
  2. Season the chicken breasts generously with garlic powder, onion powder, paprika, salt, and pepper.
  3. Preheat your grill to medium-high heat.
  4. Make sure the grill grates are clean and lightly oiled.
  5. Place the chicken breasts on the hot grill and grill for about 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C).
  6. Top each chicken breast with a generous amount of cheese during the last minute of grilling.
  7. Close the grill lid and let the cheese melt for about a minute or two.
  8. Cut the avocados in half, remove the pits, and scoop out the flesh.
  9. In a small bowl, mash the avocado with a fork.
  10. Add lemon juice, salt, and pepper to the mashed avocado and mix well.
  11. Remove the chicken from the grill and let it rest for a few minutes before serving.
  12. Top each chicken breast with a generous dollop of mashed avocado.
  13. Garnish with chopped cilantro, red onion, or a drizzle of hot sauce, if desired.

Notes

For even more flavor, marinate the chicken for at least 30 minutes. Pound the chicken breasts to an even thickness before grilling. Experiment with different cheeses.
