- Cut the watermelon into cubes, removing any seeds if necessary.
- Add the watermelon cubes, water (or coconut water), lime juice, and mint leaves (if using) to the blender.
- Blend on high speed until completely smooth and creamy.
- Taste the smoothie and add honey or maple syrup if needed, adjusting to your preference.
- Add ice cubes, a handful at a time, and blend until you reach your desired consistency.
- Pour the smoothie into glasses and garnish with a sprig of mint or a wedge of watermelon.
- Serve immediately.
Notes
For an extra-thick and frosty smoothie, freeze some of the watermelon cubes for at least 30 minutes before blending. Adjust the sweetness to your liking, as watermelon sweetness can vary. This smoothie is also a great base for adding other fruits, greens, or spices. Store leftover smoothie in the refrigerator for up to 24 hours, but it's best enjoyed fresh. If storing, stir well before serving as it may separate.
