  • 1 tablespoon chia seeds
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • 2 tablespoons Greek yogurt or non-dairy yogurt
  • 1 tablespoon milk dairy or non-dairy
  • 1 tablespoon powdered sugar optional
  • Pinch of vanilla extract for glaze

Method
 

  1. Combine the Oats: In a jar or container, add the rolled oats, milk, chia seeds, maple syrup, cinnamon, vanilla extract, and salt.
  2. Stir Well: Use a spoon or whisk to thoroughly combine all the ingredients. Ensure there are no clumps of chia seeds or cinnamon.
  3. Prepare the Glaze: In a separate small bowl, whisk together the Greek yogurt, milk, powdered sugar (if using), and vanilla extract. The glaze should be smooth and creamy. If it's too thick, add a little more milk.
  4. Layer and Refrigerate: Pour the glaze over the oat mixture. Do not stir it in. Cover the jar or container with a lid and refrigerate overnight (or for at least 4 hours).
  5. Enjoy: In the morning, stir the oats to incorporate the glaze (or leave it layered). Enjoy cold straight from the fridge, or warm in the microwave for 30-60 seconds.

Notes

For best results, use rolled oats (old-fashioned). Adjust the liquid if the oats are too thick or runny. Add toppings like fruits, nuts, or seeds for extra flavor and texture. Overnight oats will keep in the refrigerator for up to 5 days in an airtight container.
