  • 2 cups frozen strawberries
  • 1 cup full-fat canned coconut milk
  • 1 tablespoon fresh lime juice
  • 1-2 tablespoons maple syrup, to taste
  • 1 pinch of salt
  • 2-4 tablespoons coconut water or water optional, to help blending
  • Fresh strawberries, lime wheels, or toasted coconut flakes for garnish optional

Method
 

  1. Combine the frozen strawberries, full-fat coconut milk, fresh lime juice, 1 tablespoon of maple syrup, and a pinch of salt in the canister of a high-powered blender.
  2. Secure the lid and blend, starting on low and increasing to high speed, for 30-60 seconds until the mixture is completely silky smooth. If the mixture is too thick, add a splash of coconut water or water to help it blend.
  3. Taste the refresher and adjust sweetness as needed, adding more maple syrup or a tiny extra squeeze of lime juice until it's perfect for your palate.
  4. Pour immediately into chilled glasses. Garnish with a fresh strawberry, a lime wheel, or toasted coconut flakes, and serve while frosty.

Notes

For the creamiest texture, a high-speed blender is recommended. Be sure to use full-fat canned coconut milk, not the refrigerated carton type, for a luxurious mouthfeel. This drink is best enjoyed immediately after blending. For variations, try adding a handful of frozen mango or pineapple for a tropical twist, a few fresh mint leaves for a cool note, or top with sparkling water for a fizzy version.
