Ingredients

  • 2–3 lbs chicken (breasts, thighs, or a mix)
  • 1–1.5 cups BBQ sauce (store-bought or homemade)
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tbsp brown sugar (optional)
  • salt and pepper to taste

Equipment

  • crockpot
  • Mixing bowl
  • Measuring spoons
  • forks for shredding

Method

  1. Pat the chicken dry with paper towels to help the sauce adhere better.
  2. Mix smoked paprika, garlic powder, onion powder, salt, and pepper. Rub evenly over chicken.
  3. Place chicken into the crockpot.
  4. Pour BBQ sauce and apple cider vinegar over the chicken. Add brown sugar if using. Stir to coat.
  5. Cook on LOW for 6–8 hours or HIGH for 3–4 hours until fully cooked and tender.
  6. Shred chicken with two forks.
  7. Return shredded chicken to crockpot and stir into sauce. Let sit 10 minutes to soak up flavor.
  8. Serve on buns, rice, salad, or sweet potatoes. Enjoy!

Notes

Use thighs for juicier results, or breasts for a leaner dish. Add chopped onions or bell peppers for extra depth. Make it healthier with low-sugar BBQ sauce, or spicier with cayenne or hot sauce. Great for sandwiches, bowls, or salads!
