  • 1 lb fresh okra, washed and thoroughly dried
  • 2 tbsp olive oil or avocado oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 0.5 tsp onion powder
  • 0.25 tsp cayenne pepper (optional)
  • to taste salt and black pepper
  • 0.25 cup grated Parmesan cheese (optional)

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Thoroughly dry the okra using a clean towel or salad spinner. Trim stems and slice into 1/2-inch rounds, or leave whole if preferred.
  3. In a large bowl, toss okra with olive oil until evenly coated.
  4. Add garlic powder, paprika, onion powder, cayenne (if using), salt, and pepper. Toss well to coat. Add Parmesan if using and toss again.
  5. Spread okra in a single layer on the prepared baking sheet. Do not overcrowd.
  6. Bake for 20–25 minutes, flipping halfway, until golden and crispy. Watch closely near the end to avoid burning.
  7. Let cool slightly before serving. Enjoy as a snack, side, or crunchy topping!

Notes

Be sure to dry the okra thoroughly before seasoning and baking. Don't overcrowd the pan and use parchment paper to ensure maximum crispiness. For added flavor, toss in Parmesan or change up the spices with your favorite blend!
