Crispy Kohlrabi Fries

Ingredients
  

  • 2 medium kohlrabi bulbs about 1 pound total
  • 2 tablespoons olive oil or avocado oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper optional
  • Salt to taste
  • Freshly ground black pepper to taste
  • Optional dipping sauce: Ketchup, aioli, sriracha mayo, ranch dressing, honey mustard, spicy peanut sauce

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Peel the kohlrabi bulbs using a vegetable peeler.
  3. Cut the kohlrabi into fry shapes, about ½ inch thick. Aim for uniform sizes.
  4. Place the kohlrabi fries in the large bowl.
  5. Drizzle with olive oil and sprinkle with smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper.
  6. Toss everything together until the kohlrabi fries are evenly coated with the oil and spices.
  7. Line a baking sheet with parchment paper.
  8. Spread the kohlrabi fries in a single layer on the prepared baking sheet, avoiding overcrowding.
  9. Bake for 20-25 minutes, flipping halfway through, until the fries are tender and golden brown.
  10. Remove from the oven and serve immediately with your favorite dipping sauce.

Notes

For extra crispy fries, ensure the kohlrabi pieces are uniformly cut and not overcrowded on the baking sheet. Pat the kohlrabi fries dry with paper towels before tossing with oil and spices to remove excess moisture. Store leftover fries in an airtight container in the refrigerator for up to 2 days, but note they will lose crispness. Reheat in a preheated oven at 350°F (175°C) or air fryer to restore some crispness. Experiment with different spice blends like chili powder, cumin, or herbs like rosemary and thyme. For air fryer kohlrabi fries, cook at 375°F (190°C) for 12-15 minutes, flipping halfway.
