Ingredients
  

  • 2 large cucumbers, thinly sliced (per variation)
  • 1/2 cup sour cream (for creamy version)
  • 1/4 cup mayonnaise (for creamy version)
  • 2 tbsp white vinegar
  • 1 tbsp sugar (adjust to taste)
  • 1 tbsp fresh dill, chopped
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1/4 cup rice vinegar (for Asian version)
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • 1/4 tsp red pepper flakes (to taste)
  • 1 tbsp sesame seeds, toasted
  • 2 green onions, thinly sliced
  • 1 cup cherry tomatoes, halved (for Mediterranean version)
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1 clove garlic, minced (for Mediterranean dressing)
  • 2 tbsp lemon juice
  • 1/4 cup olive oil

Equipment

Method
 

  1. Thinly slice cucumbers for each variation. Sprinkle with salt, rest 15–20 mins, rinse and pat dry to remove excess water.
  2. For Creamy Salad: Whisk sour cream, mayo, vinegar, sugar, dill, salt, and pepper. Add cucumbers and chill for 30+ minutes.
  3. For Asian Salad: Whisk rice vinegar, soy sauce, sesame oil, sugar, garlic, ginger, pepper flakes. Toss with cucumbers, sesame seeds, and green onion. Chill 30+ mins.
  4. For Mediterranean Salad: Mix oil, lemon juice, garlic, salt and pepper. Toss with cucumbers, tomatoes, onions, olives, feta, parsley, and mint. Serve immediately.
  5. Garnish each variation as desired. Chill before serving (except Mediterranean version which is best fresh).

Notes

Use fresh herbs for maximum flavor. Don’t skip the salting step to keep your salad crisp. For best results, chill each salad for at least 30 minutes before serving, but avoid marinating for too long. Customize spice, sweetness, or herbs based on your preference.
