- In a large skillet over medium-high heat, brown the ground beef, breaking it up with a spoon as it cooks. Drain off any excess grease.
- Stir in the taco seasoning and 1/4 cup of water. Bring to a simmer and cook for 5-7 minutes, or until the water has evaporated and the meat is nicely coated with the seasoning.
- If you don't already have cooked rice, prepare it according to package directions. Ensure rice is cooked and fluffy.
- In a large bowl, lightly crush the Doritos. You want them broken into bite-sized pieces, but not completely pulverized.
- Start with a layer of cooked rice in each serving bowl.
- Spoon the seasoned ground beef over the rice.
- Add shredded cheese, diced tomatoes, shredded lettuce, sour cream, salsa, black beans, corn, avocado, green onions, and jalapeños – whatever your heart desires!
- Generously sprinkle the crushed Doritos over the top of each bowl.
- Serve immediately and enjoy!
Notes
For best results, use warm rice to help melt the cheese. Don't overcook the ground beef, as it can become dry. Lightly crushing the Doritos is key to maintaining their crunch. Feel free to experiment with different toppings and variations, such as using shredded chicken or plant-based crumbles. Leftover taco meat and rice can be stored separately in airtight containers in the refrigerator for up to 3 days. Reheat before serving. Assembled bowls are not recommended for storage due to the Doritos becoming soggy. To spice things up, add a pinch of cayenne pepper or use a hotter salsa. For a vegetarian option, use plant-based crumbles and add extra vegetables like bell peppers and onions.
