- In a large bowl, toss the chicken pieces with 2 tablespoons of olive oil, 4 minced garlic cloves, oregano, red pepper flakes (if using), salt, and pepper. Make sure the chicken is evenly coated with the seasonings.
- Heat a large skillet or wok over medium-high heat. Add the seasoned chicken to the hot skillet in a single layer (work in batches if necessary to avoid overcrowding).
- Cook the chicken for 5-7 minutes, or until it is cooked through and lightly browned on all sides. Remove the chicken from the skillet and set aside.
- In the same skillet, add 2 tablespoons of olive oil. Add the remaining 2 minced garlic cloves and cook for about 30 seconds, or until fragrant, being careful not to burn it.
- Add the broccoli florets to the skillet and cook for 5-7 minutes, stirring occasionally, until they are slightly tender-crisp. If the broccoli starts to brown too quickly, add a tablespoon of water to the skillet and cover it for a minute or two to steam them.
- Add the chopped spinach to the skillet. Cook for 2-3 minutes, stirring constantly, until the spinach is wilted.
- Pour in the chicken broth and lemon juice. Season with salt and pepper to taste. Bring the mixture to a simmer.
- Return the cooked chicken to the skillet with the broccoli and spinach. Stir to combine and heat through for another minute or two.
- Serve the Garlic Chicken with Broccoli and Spinach immediately. Sprinkle with grated Parmesan cheese, if desired.
- Enjoy it as a standalone dish, or serve it over cooked pasta or rice for a more complete meal.
Notes
Don't overcrowd the pan when cooking the chicken for better searing. Adjust the garlic and red pepper flakes to your liking. Use fresh ingredients for the best flavor. For a creamier sauce, stir in a splash of heavy cream at the end. Feel free to add other vegetables like bell peppers or mushrooms. For more flavor, marinate the chicken before cooking. Leftovers can be stored in the refrigerator for up to 3 days. Reheat gently to avoid drying out the chicken.
