  • 1.5 lbs Chicken Tenders, trimmed
  • 1/4 cup Olive Oil
  • 1/4 cup Lemon Juice, freshly squeezed
  • 2 cloves Garlic, minced
  • 2 tbsp Dried Oregano
  • 1 tbsp Dried Thyme
  • 1 tsp Paprika
  • 1/2 tsp Salt or to taste
  • 1/4 tsp Black Pepper, freshly ground
  • 1/4 cup Chopped Fresh Parsley, for garnish optional
  • 1 tbsp Olive Oil if pan-frying

Method
 

  1. Prepare the Marinade: In a bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and pepper.
  2. Marinate the Chicken: Place the chicken tenders in a zip-top bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours.
  3. Preheat your grill, oven to 400°F (200°C), or heat a large skillet over medium-high heat. If using a skillet, add a tablespoon of olive oil.
  4. Grilling: Grill the chicken tenders for 3-4 minutes per side, or until cooked through and lightly charred.
  5. Baking: Place the marinated chicken tenders on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until cooked through.
  6. Pan-Frying: Cook the chicken tenders for 4-5 minutes per side, or until cooked through and golden brown. Be careful not to overcrowd the pan; cook in batches if necessary.
  7. Rest: Remove the chicken tenders from the heat and let them rest for 5 minutes before serving.
  8. Garnish and Serve: Garnish with fresh parsley, if desired. Serve hot.

For best results, use fresh, high-quality chicken tenders. Marinating the chicken for at least 30 minutes, but no more than 4 hours, will ensure optimal flavor and tenderness.
