Ingredients

  • 4 cups cubed watermelon, seeds removed and frozen
  • 1/2 cup white rum or more, to taste
  • 1/4 cup fresh lime juice about 2-3 limes
  • 2 tablespoons simple syrup or agave nectar, honey, to taste
  • 1/4 cup water adjust as needed
  • Lime wedges or watermelon slices, for garnish

Equipment

  • High-powered blender
  • Measuring cups
  • Measuring spoons
  • Citrus juicer
  • Glasses for serving
  • baking sheet
  • parchment paper
  • Ice scoop (optional)
  • Cocktail shaker (optional, for combining before blending)

Method

  1. Prepare the Watermelon: Cut the watermelon into cubes, remove any seeds, and spread the cubes in a single layer on a baking sheet lined with parchment paper.
  2. Freeze the Watermelon: Freeze the watermelon cubes for at least 2 hours, or until solid.
  3. Combine Ingredients in Blender: Add the frozen watermelon, rum (or your chosen substitute), lime juice, simple syrup, and water to the blender.
  4. Blend Until Smooth: Blend on high speed until the mixture is completely smooth and slushy.
  5. Adjust Consistency: If the mixture is too thick, add a little more water, one tablespoon at a time. If it's not thick enough, add a handful of ice and blend again.
  6. Taste and Adjust: Give the daiquiri a taste and adjust the sweetness or tartness to your liking. Add more simple syrup for sweetness or more lime juice for tartness.
  7. Pour and Garnish: Pour the frozen watermelon daiquiri into chilled glasses.
  8. Garnish: Garnish with a lime wedge or a watermelon slice.
  9. Serve Immediately: Serve immediately for the best texture and flavor.

Notes

For a non-alcoholic version, substitute the rum with watermelon juice, coconut water, or ginger ale. To prevent a watery daiquiri, avoid over-blending. Chill your glasses in the freezer for a few minutes before serving to keep the daiquiri colder longer. Leftovers can be stored in the freezer, but may lose some texture; re-blend with a little water or lime juice before serving.
