  • 4 cups cubed watermelon seedless preferred
  • 2 tablespoons fresh lime juice or more to taste
  • 1-2 tablespoons honey, agave, or maple syrup optional, to taste
  • Fresh mint leaves, finely chopped optional

Method
 

  1. Cut the watermelon into 1-inch cubes. Remove any seeds if necessary.
  2. For a smoother texture, lightly blend about half of the watermelon cubes (optional).
  3. In a bowl, combine the watermelon cubes (and blended watermelon, if using) with the freshly squeezed lime juice. Start with 2 tablespoons per 4 cups of watermelon cubes and adjust to your liking.
  4. If desired, add honey, agave, or maple syrup to sweeten the mixture. Taste and adjust until you reach your desired sweetness level.
  5. If using mint, finely chop the leaves and stir them into the watermelon mixture.
  6. Line a baking sheet with parchment paper or a silicone mat.
  7. Spread the watermelon cubes in a single layer on the prepared baking sheet, ensuring they are not touching.
  8. Place the baking sheet in the freezer and freeze for at least 4 hours, or preferably overnight, until the watermelon cubes are completely frozen solid.
  9. Once frozen, transfer the watermelon cubes to a freezer-safe container or bag.

Notes

For best results, use a ripe and juicy watermelon. Store the frozen cubes in a freezer-safe container for up to 2 months. To prevent freezer burn, ensure the container is sealed tightly and press out any excess air. For variations, try adding other fruits like strawberries or blueberries, or experiment with herbs like basil or rosemary. If the watermelon is not sweet enough, add a bit more sweetener to taste before freezing. These cubes are best enjoyed straight from the freezer and do not need to be thawed.
