  • 1 lb fresh okra, washed and dried
  • 4-6 cloves garlic, minced
  • 2-3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Trim okra stems. Leave whole or slice into 1-inch pieces for more crispiness.
  3. Toss okra with garlic, olive oil, salt, pepper, and red pepper flakes in a bowl until well coated.
  4. Spread okra in a single layer on a baking sheet. Do not overcrowd.
  5. Roast for 20–25 minutes, flipping halfway, until tender and golden brown.
  6. Serve hot with optional lemon wedges squeezed on top.

Notes

Avoid overcrowding the baking sheet to ensure crispiness. For extra flavor, finish with lemon juice or Parmesan cheese before serving. Pairs perfectly with roasted chicken, fish, or vegetarian dishes.
