- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In a separate bowl, mix zucchini, applesauce, maple syrup, honey, eggs, oil, and vanilla until well combined.
- Stir wet mixture into dry ingredients until just combined. Do not overmix.
- Fold in dark chocolate chips.
- Pour batter into prepared loaf pan and spread evenly.
- Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For best texture, squeeze out excess moisture from the zucchini. Use avocado oil for a neutral taste, or swap with olive oil for deeper flavor. This bread freezes well — slice and store for a quick snack or breakfast.
