Ingredients
  

  • 1 1/2 cups whole wheat flour (or gluten-free blend)
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup grated zucchini, squeezed dry
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 1/4 cup honey
  • 2 large eggs
  • 2 tbsp olive oil or avocado oil
  • 1 tsp vanilla extract
  • 1/2 cup dark chocolate chips (70% cocoa or higher)

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In a separate bowl, mix zucchini, applesauce, maple syrup, honey, eggs, oil, and vanilla until well combined.
  4. Stir wet mixture into dry ingredients until just combined. Do not overmix.
  5. Fold in dark chocolate chips.
  6. Pour batter into prepared loaf pan and spread evenly.
  7. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For best texture, squeeze out excess moisture from the zucchini. Use avocado oil for a neutral taste, or swap with olive oil for deeper flavor. This bread freezes well — slice and store for a quick snack or breakfast.
