  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons toasted almonds or pepitas optional
  • 1 lime, zested optional
  • 1/4 cup red onion, thinly sliced optional

Method
 

  1. Prepare the watermelon: Cut the watermelon into bite-sized cubes, about 1-inch in size. Make sure to remove any seeds you find. Place the cubed watermelon in a large mixing bowl.
  2. Add the cheese: Crumble the feta cheese over the watermelon. Distribute evenly.
  3. Add the herbs: Sprinkle the chopped mint and basil over the watermelon and feta.
  4. Make the dressing: In a small bowl, whisk together the lime juice, olive oil, salt, and pepper until well combined.
  5. Dress the salad: Pour the dressing over the watermelon mixture. Gently toss to combine, ensuring that everything is evenly coated. Be careful not to overmix.
  6. Add the crunch (optional): If using, sprinkle the toasted almonds or pepitas over the salad.
  7. Chill and serve: Cover the bowl and refrigerate for at least 30 minutes before serving. Serve chilled and enjoy!

Notes

For best flavor, use a high-quality extra virgin olive oil and fresh lime juice. To prevent the herbs from wilting, add them just before serving.
