- Cut the chicken breasts into 1-inch cubes. Tip: freeze for 15–20 minutes before slicing for easier cutting.
- In a bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, salt, pepper, garlic powder, and red pepper flakes.
- Add chicken to marinade, toss to coat, and refrigerate for at least 30 minutes (or up to 2 hours).
- Preheat air fryer to 400°F (200°C) for 5 minutes.
- Place chicken in a single layer in the air fryer basket. Do not overcrowd — cook in batches if needed.
- Air fry for 8–10 minutes, flipping halfway, until golden and cooked through (internal temp 165°F / 74°C).
- Optional: Sprinkle Parmesan cheese over chicken during the last minute of cooking and let it crisp slightly.
- Remove chicken bites and serve hot with lemon wedges or parsley. Enjoy!
Notes
For best results, marinate the chicken for at least 30 minutes. Don't overcrowd the air fryer basket — cook in batches for a crispy finish. Add Parmesan at the end for a salty-savory upgrade!
