Ingredients
  

  • 500 g boneless skinless chicken breast (cut into 1-inch pieces)
  • 2 tbsp olive oil (extra virgin preferred)
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 4 cloves garlic (minced)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp grated Parmesan cheese (optional, for finishing)

Method
 

  1. Cut the chicken breasts into 1-inch cubes. Tip: freeze for 15–20 minutes before slicing for easier cutting.
  2. In a bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, salt, pepper, garlic powder, and red pepper flakes.
  3. Add chicken to marinade, toss to coat, and refrigerate for at least 30 minutes (or up to 2 hours).
  4. Preheat air fryer to 400°F (200°C) for 5 minutes.
  5. Place chicken in a single layer in the air fryer basket. Do not overcrowd — cook in batches if needed.
  6. Air fry for 8–10 minutes, flipping halfway, until golden and cooked through (internal temp 165°F / 74°C).
  7. Optional: Sprinkle Parmesan cheese over chicken during the last minute of cooking and let it crisp slightly.
  8. Remove chicken bites and serve hot with lemon wedges or parsley. Enjoy!

Notes

For best results, marinate the chicken for at least 30 minutes. Don't overcrowd the air fryer basket — cook in batches for a crispy finish. Add Parmesan at the end for a salty-savory upgrade!
