- In a large bowl, gently combine the ground beef, garlic powder, onion powder, smoked paprika, salt, and pepper. Be careful not to overmix.
- Divide the mixture into 12 equal portions. Use a kitchen scale for accuracy, if desired.
- Form each portion into a small, thin patty, slightly larger than the slider buns.
- Heat a large skillet or griddle over medium-high heat. Add a little oil if needed.
- Cook the patties for 2-3 minutes per side, until browned and cooked through.
- In the last minute of cooking, place a quarter of an American cheese slice on each patty to melt.
- In a medium bowl, whisk together the mayonnaise, sweet pickle relish, yellow mustard, white wine vinegar, garlic powder, onion powder, paprika, and sugar (if using).
- Taste and adjust the seasonings to your liking.
- Refrigerate the special sauce for at least 30 minutes to allow the flavors to meld.
- Slice the slider buns in half horizontally.
- Spread a generous amount of the special sauce on both the top and bottom buns.
- Place a small amount of shredded lettuce on the bottom bun.
- Top with a cooked beef patty with melted cheese.
- Sprinkle with finely diced onion.
- Add a couple of dill pickle slices (optional).
- Place the top bun on the slider.
- Serve immediately while warm.
Notes
For extra juicy patties, add a tablespoon of ice-cold water to the ground beef mixture before forming the patties. Toasting the slider buns lightly before assembly helps prevent them from getting soggy. The special sauce can be made a day ahead for even better flavor. Store leftover sliders in the refrigerator for up to 2 days. Reheat gently in a microwave or oven.
