Ingredients
  

  • 4 medium ripe peaches, peeled, pitted, and roughly chopped
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1/4 cup granulated sugar, or to taste
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • Pinch of salt

Method
 

  1. Wash, peel, and pit the peaches.
  2. Place the peaches in a blender or food processor and blend until completely smooth, creating a peach puree.
  3. In a separate bowl, whisk together the heavy cream, whole milk, granulated sugar, vanilla extract, lemon juice, and salt until the sugar is completely dissolved and the mixture is smooth.
  4. Gently pour the creamy mixture into the peach puree and stir until well combined.
  5. Taste the mixture and adjust sweetness as needed by adding more sugar, a teaspoon at a time.
  6. Carefully pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  7. Insert popsicle sticks into the molds.
  8. Place the filled popsicle molds in the freezer for at least 6 hours, or preferably overnight, until completely frozen solid.
  9. To unmold, run the molds under warm water for a few seconds to loosen the popsicles.
  10. Gently pull on the sticks to release the popsicles from the molds.
  11. Enjoy immediately!

Notes

For the best flavor and texture, use ripe, fragrant peaches. To prevent icy popsicles, use full-fat heavy cream and whole milk. If your popsicle molds don't have built-in sticks, freeze the popsicles for about 1-2 hours until partially frozen before inserting the sticks. These popsicles can be stored in the freezer for up to 2 weeks in a freezer-safe bag or container. For a richer flavor, consider adding a splash of peach schnapps (for adults only!).
