  • 2 tablespoons granulated sugar or more, to taste
  • 1 tablespoon lemon juice
  • 4 ounces strawberry puree
  • 4 ounces sparkling water or club soda
  • 1 ounce lime juice, freshly squeezed
  • Ice cubes

Method
 

  1. Combine hulled strawberries, sugar, and lemon juice in a blender or food processor.
  2. Blend until smooth and creamy, about 30-60 seconds.
  3. Taste and adjust sugar if needed.
  4. Strain through a fine-mesh sieve for an extra smooth puree (optional).
  5. Fill your glass with ice cubes.
  6. Pour 4 ounces of strawberry puree into the glass.
  7. Add 1 ounce of freshly squeezed lime juice.
  8. Top with 4 ounces of sparkling water or club soda.
  9. Stir gently to combine ingredients.
  10. Garnish with fresh strawberries, lime wedges, and a sprig of mint (optional).
  11. Serve immediately.

Notes

If the mocktail is too sweet, add more lime juice or sparkling water. If it's not sweet enough, add more sugar or simple syrup.
