  • 1 teaspoon pure vanilla extract
  • 1 pinch of salt
  • 1-2 tablespoons milk or water optional, to aid blending

Method
 

  1. Place the cottage cheese, peanut butter, maple syrup, vanilla extract, and salt into a high-powered blender. Add a tablespoon of milk or water if your cottage cheese is particularly thick.
  2. Blend on low, gradually increasing to high speed. Continue blending for a full 1-2 minutes, stopping once to scrape down the sides, until the mixture is completely smooth, glossy, and free of any curds.
  3. Pour the mousse into individual serving dishes. Cover and refrigerate for at least 1-2 hours, or up to 4 hours, to allow it to set and for the flavors to meld.
  4. Serve chilled, with optional toppings like chopped peanuts, mini chocolate chips, or fresh berries.

Notes

For the best texture, use a high-powered blender and full-fat cottage cheese. Do not skip the chilling time, as it is crucial for the mousse to firm up. Store leftovers covered in the refrigerator for up to 3 days. For variations, try adding 1 tablespoon of cocoa powder for a chocolate version, or fold in mini chocolate chips after blending. Serve topped with chopped peanuts, fresh berries, or a drizzle of melted chocolate.
