- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy (3-5 minutes).
- Beat in the eggs one at a time, then stir in the vanilla extract. Scrape down the sides of the bowl as needed.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Divide the dough into separate bowls based on the number of desired colors.
- Add a different flavor/color of Jello powder to each bowl and mix until the color is evenly distributed. Start with a tablespoon or two of Jello powder per bowl, adding more as needed.
- If the dough becomes too sticky, add a tablespoon of flour at a time until it reaches a workable consistency.
- Wrap each ball of dough in plastic wrap and refrigerate for at least 30 minutes, or up to an hour.
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper or silicone baking mats.
- On a lightly floured surface, roll out each color of dough to about 1/4 inch thickness.
- Use cookie cutters to cut out desired shapes.
- Place the cookies on the prepared baking sheets, leaving about an inch of space between each cookie.
- Bake for 8-10 minutes, or until the edges are lightly golden. Watch carefully to prevent burning.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- Decorate with powdered sugar, sprinkles, frosting, or any other desired decorations once cooled.
Notes
For best results, use high-quality ingredients and measure accurately. Store cookies in an airtight container at room temperature for up to a week, or freeze for up to 2-3 months. Layer cookies with parchment paper to prevent sticking. If cookies spread too much, chill the dough longer. Experiment with different Jello flavors for unique variations, such as Tropical Paradise (pineapple and coconut), Berry Blast (strawberry, raspberry, and blueberry), or Citrus Zest (lemon, lime, and orange).
